Cinnamon Raisin Baked Oatmeal
- 2 cups old fashioned rolled oats
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/4 - 1/3 cup of brown sugar (your choice of sweetness)
- ¼ tsp salt
- 1/2 cup ground flax seed
- 1/2 cup chia seeds
- 2 cups milk or whatever milk you have on hand (I just use skim)
- 1 tsp vanilla extract
- 1/2 cup raisins
- 1 cup unsweetened applesauce
- 3/4 cup plain, non-fat Greek yogurt
- 2 eggs, scrambled
- Preheat oven to 375.
- Spray an 8×8 or oblong casserole pan with cooking oil spray.
- In a separate bowl, add oats, flax seed, chia, brown sugar, baking powder, cinnamon, salt, and raisins. Mix well.
- Add the wet ingredients: milk, vanilla extract, Greek yogurt and applesauce.
- Stir until well combined and pour into prepared baking pan.
- Bake at 375 degrees for 40 minutes or until oatmeal is set.
