Cinnamon Raisin Baked Oatmeal

Makes 6 servings:
  • 2 cups old fashioned rolled oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/3 cup of brown sugar (more or less, your choice of sweetness)
  • ¼ tsp salt
  • 1/2 cup ground flax seed
  • 1/2 cup chia seeds (I like to add extra chia sometimes)
  • 2 cups milk or whatever milk you have on hand (I just use skim)
  • 1 tsp vanilla extract
  • 1/2 cup raisins
  • 1 cup unsweetened applesauce
  • 1 cup plain, non-fat Greek yogurt
  • 2 eggs

  1. Preheat oven to 375.
  2. Spray an 8×8  or oblong casserole pan with cooking oil spray. 
  3. In a separate bowl, add oats, flax seed, chia, brown sugar, baking powder, cinnamon, salt, and raisins. Mix well.
  4. Give the eggs a good scramble.
  5. Add the wet ingredients: eggs, milk, vanilla extract, Greek yogurt and applesauce.
  6. Stir until well combined and pour into prepared baking pan.
  7. Bake at 375 degrees for 40 minutes or until oatmeal is set.
